What is ranch life? Life on the ranch is full of blistering hot days and even some days of bitter cold. Blood and sweat are required to fertilize and water the land, but that is not why we do what we do. Ranch work is the price of admission to what we really want. I will try to document below what makes Ranch Life a way of life.

Sausage: 1/31/22
It’s that time of year. We don’t just make sausage. We make dried sausage. After smoking we let our sausage stay in the smokehouse to dry over the course of 10-14 days. This is 100lbs worth( 3 doe @ 20lbs of meat each, and 4 pork butts @ 10lbs each). 60/40
The interesting thing about dried sausage is we never cook it, and yet we have never gotten sick and died from uncooked pork. This is a big plus, but even better is the fact this is the best dried sausage in the WORLD. The recipe has been used for decades and decades dating back to my grandparents.
The tricky part is the tight window or two each winter to make dried sausage. There needs to be a good forecast of cool/cold, dry weather. Usually in late December or January, but this December was too hot by far because all the ice caps are melted.
